So I bet everybody’s at home – but count that out on our field of work. Christmas, New Year’s, any kind of holiday, we’re still flying. Thank God I’m off for today. Anyway, I’ve decorated some Easter eggs yesterday with my younger cousins and hid all of it myself this morning before waking them up. Each egg that they would find is equivalent to a bite-sized bar of Snickers. Hehe. So yeah, Lenten season is finally over so we get to eat meat now. But I’ve prepared a couple of appetizers for this day’s lunch at my grandparents’ house that everyone would surely enjoy.

Fried Mozzarella Cheese Sticks

INGREDIENTS

* 2 eggs, beaten
* 1/4 cup water
* 1 1/2 cups Italian seasoned bread crumbs
* 1/2 teaspoon garlic salt
* 2/3 cup all-purpose flour
* 1/3 cup cornstarch
* 1 quart oil for deep frying
* 1 (16 ounce) package mozzarella cheese sticks

DIRECTIONS

1. In a small bowl, mix the eggs and water.
2. Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
3. In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
4. One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

Personally I would prefer to dip these babies in mayonnaise with ketchup. πŸ™‚

INGREDIENTS

* 12 eggs
* 1/2 cup mayonnaise
* 4 slices bacon
* 2 tablespoons finely shredded Cheddar cheese
* 1 tablespoon mustard
DIRECTIONS

1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
2. Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
3. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.
